Zesty Black Bean Burgers

Serves 4


5 whole wheat hamburger buns
3 Tbsp olive oil
1 clove garlic
1 15.25 oz can black beans, rinsed and drained
1 tsp lime zest
1/2 tsp chili powder
1/2 tsp ground cumin
2 Tbsp fresh cilantro, chopped (optional)
1/4 tsp salt
tabasco to taste
1 egg, beaten


Tear or cut 1 bun into small pieces and pulse in food processor until fine crumbs. Add 1 Tbsp olive oil, garlic, and drained beans. Pulse 5 or 6 times, do not purée. Put mixture in a bowl; stir in zest and seasoning until mixed; taste for seasoning and correct if needed. Stir in egg. With lightly moistened hands, shape mixture into 4 patties. In a large skillet, heat remaining olive oil until shimmering. Carefully add patties; cook on medium heat for 3-5 minutes, until bottom is crispy and browned. Turn and continue cooking for an additional 2-3 minutes. Serve with avocado, salsa and lettuce, or traditional burger accompaniments. Can also be made as sliders (8 small patties).
