1/4 cup lemon or lime juice
2 tablespoons olive oil or other vegetable oil
2 teaspoons honey
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
salt and black pepper to taste
1 bunch kale, stems removed and leaves sliced thinly
1 mango, diced
1 cucumber, diced
1 avocado, diced
procedure
In a large bowl, combine the lemon juice, oil, honey, chili powder, cumin, black pepper and salt. Taste and adjust seasoning if necessary. Add the kale and mix well until the kale begins to soften, about 2 to 3 minutes. Add the mango, cucumber and avocado and toss gently. Marinate at room temperature for 10 minutes before serving. TIP: You can substitute thinly sliced Brussels sprouts, cauliflower, or cabbage for the kale.
