Roasted String Beans

Serves 4


1 tablespoons extra virgin olive oil
2 garlic cloves-chopped
1 pound string beans, stem removed
1 beefsteak tomato-peeled, seeded and chopped
2 tablespoons vegetable stock or water
Branch basil-torn into pieces


1. Preheat oven to 400° F.
2. Heat a medium sauté pan on high heat and add oil. When oil is just below smoking point, add beans and cook until lightly brown, about 2 minutes. Add garlic and tomato and pinch of salt, toss. Add water or stock and place in oven and cook for 2 minutes. Remove from oven and add stock or water. Toss in basil and serve hot. Also delicious at room temperature.
