8 carrots, peeled and cut into French fry shape
1/2 cup Parmesan cheese, grated
3 cloves of garlic, crushed
1 Tbsp honey
1 – 2 Tbsp olive oil
salt and pepper to taste
Pre-heat oven to 500 degrees. In a large bowl, combine all ingredients. Mix until all carrots are evenly coated. Spread ingredients onto a parchment paper lined cookie sheet, sprinkle lightly with salt and pepper and bake for 10 minutes turning occasionally. Once carrots are fork tender, sprinkle with extra cheese if desired and serve hot.
