Kachumber Salad

Serves 4


Healing Spice Blend
1 Tbsp curry powder
1 1/2 tsp ground cinnamon
1 1/2 tsp ground ginger
1 1/2 tsp ground turmeric
1 1/2 tsp ground black pepper

1 large cucumber, cut into small dice
2 large tomatoes, cut into small dice (Plum or tomatoes on vine when available)
2 Tbsp red onion, diced
1 Tbsp lemon juice
Pinch of salt
1/4 tsp healing spice blend


1. Prepare the healing spice blend by mixing together all the spices. This can be stored in an airtight container until ready to use.
2. Combine chopped cucumbers, tomatoes, and onions in a bowl.
3. Season with the lemon juice, salt, and spice blend.
4. Serve and eat right away or store in the refrigerator, covered, for up to one day.
