Chocolate “Surprise” Muffins

Makes 36 mini muffins


1 1⁄4 cups whole wheat flour 1⁄4 cup cocoa powder
1 tsp salt
1 tsp baking soda
1⁄4 cup coconut oil
1⁄4 cup honey
2 eggs
1 cup bananas, mashed, about 2 pieces 1⁄4 cup applesauce, unsweetened
1⁄2 cup greek yogurt, unsweetened 1 tsp vanilla extract
1 cup grated zucchini


● Preheat oven to 350 degrees and grease a muffin tin
● In a medium bowl, whisk together whole wheat flour, cocoa powder, salt
and baking soda
● In a large bowl, whisk coconut oil and honey together until combined
well, about two minutes
● Add eggs one at a time, whisking thoroughly until well combined
● Add in mashed banana, yogurt, applesauce, and vanilla to wet mixture
and whisk until combined
● Add dry ingredients to wet ingredients and whisk until just combined
● Fold in zucchini, careful to not over mix
● Portion mixture into muffin tins and bake for approximately ten minutes
