Carrot-Apple Slaw

Makes 8 servings (3/4 cup each)


2 apples, cored, thinly sliced into matchsticks
1 1/2 Tbsp lemon juice, fresh
3 cups carrots, shredded
1/4 cup chives, chopped
1/4 cup feta cheese, crumbled (blue cheese may be substituted)
1 Tbsp olive oil
1/2 tsp salt
black pepper to taste


In a large bowl, toss apples with lemon juice. Add all other ingredients. Toss to mix completely. Enjoy!
