2 medium-sized heads of broccoli
1⁄4 cup dried cranberries
1⁄2 cup shredded carrots
1 slice or 2 tbsp, chopped red onion
2 tbsp honey roasted sunflower seeds
Honey Mustard Vinaigrette
2 Tbsp orange juice
1⁄2 Tbsp cider vinegar
1⁄2 Tbsp honey
1⁄2 Tbsp mustard
1⁄4 cup olive oil
Salt and pepper to taste
1. Prepare the vinaigrette. Combine orange juice, apple cider vinegar, honey,
mustard, and salt pepper in a small bowl and whisk. Add olive oil slowly while
whisking so that a thick consistency is achieved.
2. In a large bowl, combine the chopped broccoli, shredded carrots, cranberries,
honey roasted sunflower seeds, and chopped onions.
3. Pour dressing over salad ingredients until lightly coated and toss using tongs.
