Local farm collaboration for WITS Green Labs, CA


Our Green for Kids Program has provided us with the opportunity to bring programming to schools that were uncomfortable handling food during these uncertain times. Having a chance to take students outdoors in our NYC market and clean up to prepare the areas in front and back of schools helped us to connect with the students, as did talking about how food grows and how plants keep the air clean. The students are looking forward to seeing what will happen in their garden beds and checking them as they arrive at school! Out West in California, our schools’ kitchens are able to work with local farmers to get produce. Our Chefs there have reconnected with these farmers to get fresh produce for lab classes. Also using the produce that is growing in the school’s gardens has excited the students when they get to make recipes like WITS fresh applesauce. Notes of excitement from our chef Cait Olesky prove that the excitement starts with us:  “I got to spend a little time picking apples in the garden Friday. They are so much more flavorful and beautiful than the ones we get from the district — kids are going to love them!”
