Lemon Honey Vinaigrette

Makes 1 cup


3 Tbsp fresh lemon juice
1 Tbsp Dijon mustard
1 Tbsp honey
1/3 cup olive oil
salt and pepper to taste


In a small bowl, whisk together lemon juice, mustard, and honey. Add the oil in a slow, stead stream, whisking constantly until emulsified. Season to taste with salt and pepper. Store in refrigerator.
