French Dressing

Makes about 1 cup


4 Tbsp apple cider vinegar
2 tsp onion, grated finely
pinch of garlic, grated finely
2 Tbsp honey
2 Tbsp tomato paste
1/2 cup olive oil
salt and pepper to taste


In a blender or food processor, blend all ingredients except oil. With the motor running, slowly add oil in a steady stream until emulsified. Taste and adjust seasoning as necessary. Store in refrigerator.
Dressing can be made without a blender or food processor: In a large bowl, whisk together vinegar, onion, garlic, honey, and tomato paste. Slowly whisk in oil in a steady stream until emulsified. Season to taste with salt and pepper. Store in refrigerator.
