Principles from the Principals
Written by: Abby de Riel
From coast to coast and school district to school district, our Cook for Kids Flagship program makes a deep impact on a school’s wellness community. At the end of another great year working in partnership with schools to help students learn, live, and thrive, we reflect on the meaning of our work. Read on for testimonials from a few of the strongest advocates of our work, the principals of WITS schools themselves.
“Wellness in the Schools utilizes a multifaceted approach, incorporating cooking classes, gardening practices, Chef Partner activities, and nutritional lessons. These initiatives not only educate students about healthy eating but also empower them to make informed choices that can positively impact their lives both now and in the future. Furthermore, when students have access to wholesome food options, they perform better academically and develop lifelong healthy habits.”
— Principal Dr. Voley, Charles R. Drew K–8 Center, Miami, Florida

“I love the cultural connections in WITS Labs. We do four Lab weeks every year with students centered around cultural celebrations we highlight in the school in tandem.”
— Principal Nam, Rancho Elementary School, Novato, California
This year, WITS Chef Cait brought students four recipes: A Miwok Bowl to celebrate Indigenous People’s Day in October, a Latke and Applesauce Lab to celebrate Hanukkah in December, a Jollof Rice recipe to celebrate Black History Month in February, and a Huli Huli Roasted Cauliflower recipe to celebrate Asian American and Pacific Islander Heritage Month in May. Each WITS Lab was not just a recipe preparation and taste-test, but a learning experience about how different cultures prepare different ingredients. Students encouraged their peers to try the recipe each class and often told WITS Chef Cait about recipes they make at home with their families that tasted familiar.
“I want to reiterate how much we appreciate all the work that went into making this Pineapple Rice Medley Cafe Day event a success, and everything you do in our school. We truly appreciate your partnership and positive energy!”
— Principal Tolano, PS 311 Lucero Elementary School, the Bronx, New York
