Chef Mark Strausman of Freds at Barneys New York says kids are a tough audience of eaters because they say exactly what they think. “The real James Beard Award winners are the cafeteria workers who wake up every day to make sure children get fed,” he said. Chef Strausman has worked in the food industry for 40 years and said he is proud not only of the number of people with whom he has worked, but also the diversity of the labor pool. He grew up in Queens, attended public school and said he is delighted to be giving back as a WITS Chef Partner. He said he sees the training of WITS chefs in the cafeteria not only as a way to make change for children, but also as a way for chefs to learn new job skills.
