WITS partners with local departments of education to meet our goals for alternative menus and salad bars. WITS Chefs train school cooks on the implementation of the menu and work with school communities to increase participation through tastings, education, and ongoing support.
This winter Chef Cynthia Tomasini was excited to see marinated vegetable salad featured on the salad bar. Not only is this dish colorful in its presentation, it is also low in fat and high in fiber, iron, vitamin B, and potassium. It also provides a protein alternative on the salad bar for those seeking one!
